Aloha and Happy Thanksgiving!

As an alternative to the traditional roasted turkey, or the popular deep fried turkey, why not give this simple and truly tasty recipe a try – Oven Kalua Turkey.


1 twelve pound turkey
16 large ti leaves
1/2 cup softened butter or margarine
3 tablespoons Hawaiian salt
2 teaspoons liquid smoke

Rinse and drain turkey. Line a large baking pan with foil. Wash ti leaves in a sink of cold water with a few drops of dish soap then rinse. Remove fibrous part of the veins. Line baking pan with ti leaves radiating from center. Place two additional ti leaves across the middle of the pan. Place turkey on the ti leaves. Rub butter, salt, then liquid smoke on inside and outside of turkey. Place 4-6 ti leaves over the turkey. Fold leaves around the turkey.Crimp foil around turkey and cover pan tightly with additional foil. Roast in electric oven at 375 degrees F for 6 hours. Shred turkey and add in pan liquid to moisten meat. Makes 8-10 servings.

    here is another alternative recipe. The ingredients will increase if you make a larger turkey.

    1 12lb turkey
    3 oranges
    3 lemons
    3 cloves of garlic
    2 onions

    1/2 cup melted butter
    1 teaspoon salt
    1 table spoon poultry seasoning

    rinse and drain the turkey. Cut the oranges, lemons, and onions into round slices then cut the round slices into fours. Peal and chop the garlic. Begin to stuff the neck and the bottom of the turkey with the oranges, lemons, onions, and garlic (sometimes I place additional stuffing under the turkeys skin). Place the turkey in a roasting pan. Pour the melted butter over the top of the turkey, then season the top with the salt and the poultry seasoning. Add water if needed, you only need enough to slightly cover the bottom of the pan. Place the turkey in the oven or a roasting oven at 200 degrees( I usually do this the night before to eat the turkey the next day or in the morning to eat the turkey for dinner). When the turkey is done remove all of the oranges, lemons, and onions.

    try cooking the turkey at 225 overnight instead of 375.. i usually put it in the oven at 7 pm and it is ready in the morning .. it will be much more moist ,,one more tip is to put the breast side down … the meat will fall off the bone
